A Slower Pace: Dining at Parg in the Uckermark

Tucked away in the idyllic village of Gerswalde, Parg is more than just a restaurant; it is a sanctuary of slow living, deeply connected to the rhythms of nature. This garden-to-table bistro, founded by Hannes Broecker and Claude Schötz—known for their Berlin-based wine bar JaJa—invites you to savor the beauty of simplicity, where dishes are made with fresh, handpicked ingredients from the surrounding garden. Here, time slows down.

The restaurant sits within the Großer Garten, a sprawling estate that celebrates the intersection of local culture, food, and sustainability. Founded by Lola Randl, an artist and filmmaker, Parg is part of her larger vision to create a space where community, creativity, and sustainable living flourish together.

The Großer Garten itself is an ever-evolving project, part of a broader movement towards ecological farming and local self-sufficiency. The garden produces many of the vegetables, herbs, and fruits featured in Parg’s seasonal menus. From heirloom tomatoes to fragrant herbs, everything that appears on the plate has been thoughtfully grown just a few steps away. This garden-to-table philosophy is core to Lola’s approach, as she envisions the space as a place where both locals and visitors can reconnect with the land and appreciate the beauty of nature’s cycles.

Lola’s background as a filmmaker and artist shines through in every detail of Parg, from the design of the space to the curated events that often accompany the dining experience. In addition to meals, the Großer Garten hosts workshops, talks, and even film screenings, inviting guests to not only taste but also think and reflect. Lola’s creative and philosophical approach to life is woven into the restaurant’s atmosphere, making Parg a place where food, art, and community intersect.

Whether you come for the slow-paced meals, the natural beauty of the garden, or to experience one of the many cultural events, Parg offers an escape from the rush of modern life. In the Uckermark, where the landscape invites contemplation, Lola Randl has created a dining destination that feeds both body and soul.In a region known for its rustic charm, Parg stands as a testament to the possibility of blending sustainability, creativity, and local culture into a single, harmonious experience.
